Sealed, slow-cooked on dum, and opened where you can smell it — at your table, not in the kitchen.
Rice and marinated chicken are layered in the handi, the lid is sealed, and the pot cooks in its own steam — dum. Nothing is stirred, nothing is rushed. When the seal breaks at your table, the first thing that reaches you is the saffron and browned onion. Underneath: rice in two colours, chicken that has taken the masala all the way in.
Layer. Rice over marinated chicken, saffron milk and birista between the layers.
Seal. The lid goes on and the handi is closed to its own steam.
Dum. Slow heat does the mixing — flavours trade places without a spoon touching them.
Open. The seal breaks at the table. Raita on the side, always.
For two
A generous handi for two with raita — the standard Vijay Nagar date order.
For the table
Family-sized and opened in the middle of the table. Tell us on WhatsApp and it times with your seating.
The smokier one
Charcoal tikka pieces folded through the rice — for people who order both anyway.
